This is the snack served by Nicola and Antonella Titone when we went to visit their olive grove. It was so delicious, yet so simple, that I had to include it here.

Ingredients

Quantity Ingredient
1 loaf good-quality sourdough ciabatta
best quality extra virgin olive oil
1-2 very ripe tomatoes, sliced
handful fresh basil leaves
salt flakes

Method

  1. Slice the ciabatta in half lengthwise. Sprinkle each half with extra-virgin olive oil and top with tomato slices and a few basil leaves, then season with salt flakes.
