Almond biscuits

An interesting little biscuit, with its topping of icing sugar and stiffly beaten egg white, sprinkled with chopped almonds. When baked, the icing hardens to a delectable, shiny, crisp coating.

Ingredients

Quantity Ingredient
125g butter, softened
55g caster sugar
1 teaspoon vanilla essence
1 egg yolk
250g self-raising flour, sifted
a pinch of salt
1 egg white
160g icing sugar, sifted
finely chopped blanched almonds

Method

  1. Preheat the oven to 190°C. Grease baking trays or line them with baking paper.
  2. Using an electric mixer, cream the butter with the sugar and vanilla, add the egg yolk and beat well. Mix in the sifted flour and salt to form a firm dough.
  3. Turn the dough out on a floured surface and roll out to a 5 mm thickness.
  4. Beat the egg white until stiff, add the icing sugar gradually and beat until smooth.
  5. Spread the icing over the prepared biscuit mixture. Sprinkle with almonds and cut into diamond or other decorative shapes. Place on greased baking trays and bake for 10–12 minutes. Transfer to wire racks to cool.
