Three favourites – butter, sugar and blanched almonds – are combined to make these delicious butttery balls of flavour. Such simply flavoured biscuits require the best ingredients, so use the freshest almonds and butter.

Ingredients

Quantity Ingredient
250g butter, softened
55g caster sugar
1 teaspoon vanilla essence
250g plain flour
1/2 teaspoon salt
3/4 cup chopped, blanched almonds
160g icing sugar

Method

  1. Preheat the oven to 180°C. Lightly grease baking trays.
  2. Using an electric mixer, cream the butter with the sugar and vanilla. Sift the flour and salt and blend into the creamed mixture with the almonds to form a dough.
  3. Shape into balls the size of walnuts, or mould into crescent shapes. Place on the prepared baking trays and bake for about 15 minutes or until firm and lightly coloured.
  4. Remove from the trays and while still warm, roll in the icing sugar. Transfer to wire racks to cool, then roll again in the icing sugar. Store in airtight containers.
