This is a very good basic biscuit recipe and useful to have on hand for when unexpected visitors drop by. They are quick to make, the flavourings can be varied and they keep well.

Ingredients

Quantity Ingredient
125g butter, softened
75g caster sugar
1 egg
1 teaspoon vanilla essence
110g plain flour, sifted
salt

Method

  1. Preheat the oven to 190°C. Grease baking trays or line them with baking paper.
  2. Using an electric mixer, cream the butter with the sugar, then beat in the egg and vanilla. Stir in the flour and salt. Drop teaspoonfuls of the mixture onto the prepared baking trays, spacing them well apart.
  3. Bake for 10 minutes or until the biscuits are golden brown around the edges. Transfer to wire racks to cool.

Variations

  • Chocolate butter wafers

    Add about 1 tablespoon cocoa powder but reduce the flour in proportion.

    Coffee butter wafers

    Add 1/2–1 teaspoon instant coffee powder (depending on the strength of the coffee) to the dough.

    Poppy or sesame seeds

    Sprinkle poppy or sesame seeds over the biscuits before baking.
