These simple biscuits are quick and easy to make. You can also get little ones to help with the mixing as there are no electric beaters involved, just a good old-fashioned wooden spoon.

Ingredients

Quantity Ingredient
1 cup rolled oats
1 cup ricotta or cottage cheese
150g self-raising flour, sifted
110g caster sugar
1/4 cup chopped raisins
1/4 cup chopped glace cherries
125g butter, melted
1/3 cup milk

Method

  1. Preheat the oven to 190°C. Grease baking trays or line them with baking paper.
  2. Combine all the ingredients and, using a wooden spoon, mix well to a stiff batter. Place teaspoons of the mixture on the prepared baking trays, allowing space for spreading. Bake for 15–20 minutes or until golden and firm.
  3. Remove from the trays and transfer to wire racks to cool.

Variations

  • Sultana

    The raisins can easily be replaced with sultanas.

    Currants

    Try using currants instead of raisins.

    Mixed peel

    The glacé cherries can be replaced with mixed peel.
