These gingernut biscuits have a hard crunchy texture and a wonderful spicy flavour. They are an old favourite.

Ingredients

Quantity Ingredient
150g plain flour
2 tablespoons caster sugar
1 teaspoon bicarbonate of soda
1 teaspoon mixed spice
1 teaspoon ground cinnamon
1 teaspoon ground ginger
60g butter
2 tablespoons golden syrup
55g extra caster sugar, (optional)

Method

  1. Preheat the oven to 180°C. Grease baking trays or line them with baking paper.
  2. Sift the flour with the remaining dry ingredients. Melt the butter with the golden syrup and pour into the flour mixture. Mix well and roll into balls the size of a walnut. If liked, roll the balls in extra sugar before baking for super crunchiness.
  3. Place on the prepared baking trays and press lightly. Bake for 5 minutes, then reduce the oven temperature to 180°C and bake for a further 7–10 minutes. Cool on the trays.
