Spice and honey always go well together. Cut these cookies into various shapes such as hearts, gingerbread people or stars to dunk into a sweet wine or coffee.

Ingredients

Quantity Ingredient
150g plain flour
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon mixed spice
75g unsalted butter,, diced
1/4 cup honey

Method

  1. Preheat the oven to 180°C. Line two baking trays with baking paper.
  2. Sift the flour and spices into a bowl. Using your fingertips, rub in the butter until the mixture resembles breadcrumbs. Add the honey and mix gently to form a soft dough. Wrap with plastic wrap and chill for 30 minutes.
  3. Roll out the dough between two sheets of baking paper to a thickness of 4–6 mm. Cut out shapes using various cutters of your choice. Arrange the biscuits, slightly apart, on the prepared baking trays. Chill for 10 minutes.
  4. Bake for 10 minutes or until golden. Leave on the trays for 5 minutes before transferring to wire racks to cool completely.
