Ingredients

Quantity Ingredient
90g butter, softened
2 tablespoons crunchy peanut butter
330g caster sugar
100g lightly packed brown sugar
1 teaspoon vanilla essence
1 egg
200g self-raising flour, sifted
1 teaspoon salt
1/2 cup rolled oats

Method

  1. Using an electric mixer, cream the butters with the sugars and vanilla. Add the egg, beat well, then stir in the flour and salt. Mix in the oats.
  2. Form the mixture into two rolls about 2.5 cm in diameter, wrap in plastic wrap and chill for about 30 minutes.
  3. Preheat the oven to 180°C. Grease baking trays or line them with baking paper.
  4. Cut the dough into 6 mm thick slices and arrange on the prepared baking trays. Bake for about 20 minutes.
  5. Cool on the baking trays for 3 minutes, then transfer to wire racks to cool completely.
