These sweet, spicy-flavoured biscuits are an old recipe, made as a special treat in Christmasses past using the exotic spices that came back with spice traders from the east.

Ingredients

Quantity Ingredient
525g plain flour
1 teaspoon baking powder
1 teaspoo ground cloves
1 teaspoon ground allspice
a grinding of black pepper
1 teaspoon ground cinnamon
2/3 cup honey
1 cup golden syrup
165g caster sugar
45g butter

Method

  1. Preheat the oven to 200°C. Grease baking trays or line them with baking paper.
  2. Sift together the flour, baking powder, cloves, allspice, pepper and cinnamon. Place the honey, golden syrup and sugar in a large, heavy saucepan. Stir over low heat until the sugar dissolves, then bring to the boil, without stirring. Reduce the heat to low and simmer for 5 minutes.
  3. Remove from the heat and stir in the butter. Add the flour mixture, one-quarter at a time, beating well with a wooden spoon until smooth.
  4. Place teaspoonfuls of the mixture on the prepared baking trays, leaving about 2.5 cm space between them.
  5. Bake for 10–15 minutes or until light brown. Transfer to wire racks to cool. Store in an airtight container for up to six weeks.

Note

  • Once the biscuits are cold, they can be iced with Glacé Icing if you like.
