Ingredients

Quantity Ingredient
250g butter, softened
240g icing sugar, sifted
1 egg
1 teaspoon vanilla essence
275g plain flour
1/2 teaspoon bicarbonate of soda
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups finely chopped walnuts
walnut halves, to decorate

Method

  1. Preheat the oven to 180°C. Grease baking trays or line them with baking paper.
  2. Using an electric mixer, cream the butter with the icing sugar until light and fluffy. Add the egg and vanilla and beat well.
  3. Sift the flour with the bicarbonate of soda, baking powder and salt. Stir into the creamed mixture with the chopped nuts. Form the mixture into small balls, place on the prepared baking trays and top each with a walnut half.
  4. Bake for 10–12 minutes or until lightly browned. Transfer to wire racks to cool.

Note

  • Walnuts must be fresh, as they are so rich in oils that they can become bitter. To prevent this, store in a cool place, or freeze shelled walnuts. Some cooks buy tinned walnuts, which keep very fresh until opened.
