Ingredients

Quantity Ingredient
250g cream cheese, softened, or ricotta cheese
2 eggs
110g caster sugar
1 tablespoon lemon juice
1/2 cup sultanas
6 sheets filo pastry, cut in half
125g butter, melted

Method

  1. Preheat the oven to 180°C.
  2. Place the cheese, eggs, sugar and lemon juice in a large bowl and beat well until smooth. Stir in the sultanas.
  3. Stack filo between two dry tea-towels with a dampened towel on top. Place one sheet of filo in a greased 28 cm x 18 cm baking dish, first brushing the sheet with melted butter. Repeat until you have used half the filo.
  4. Spoon over the cheese filling, and continue adding the remaining filo sheets, brushing each with butter. Using a sharp knife, mark the top filo layers into 6 cm x 4 cm diamond shapes.
  5. Bake for 20–30 minutes or until the pastry is golden and the filling is set. Serve cold.

Note

  • Filo pastry is available in the freezer section of supermarkets. It is as thin as paper, so when using it to make layers, make sure the stack of pastry is covered with a tea towel to prevent it from drying out.
