These delicious brownies call for white chocolate and make a lovely dessert when served with ice cream and a small berry fruit such as blueberries or raspberries.

Ingredients

Quantity Ingredient
185g white chocolate, chopped
125g butter
2 eggs, lightly beaten
220g caster sugar
1 teaspoon vanilla essence
150g plain flour
2/3 cup coarsely chopped walnuts or macadamias
1/2 cup white chocolate bits

Method

  1. Preheat oven to 180°C. Grease a deep 20 cm square cake tin and line the base with baking paper.
  2. Place the white chocolate and butter in a large heatproof bowl. Place the bowl over a saucepan of simmering water and stir until the chocolate has melted and the mixture is smooth. Remove from the heat. Stir in the eggs, sugar and vanilla. Fold through the flour, nuts and white chocolate bits. Pour into the prepared tin.
  3. Bake for 20–25 minutes until the sides have shrunk slightly from the tin. Cool in the tin before cutting into squares.
