German apple cake

This is a cake I’ve always made over the years. It’s beautifully presented yet quite simple to make.

Ingredients

Quantity Ingredient
125g butter, softened
150g caster sugar
2 eggs
250g self-raising flour, sifted
1/2 cup milk
4 medium apples
1 lemon, juiced
extra caster sugar and ground cinnamon, to sprinkle

Method

  1. Preheat the oven to 180°C. Grease a 23 cm springform tin and line the base with baking paper.
  2. Cream the butter with the sugar. Add the eggs and beat well. Add half of the flour and beat to combine. Add the milk and remaining flour alternately (this will make a thick mixture). Spread the mixture in the prepared tin.
  3. Peel, quarter and thinly slice the apples. As you prepare them, put the slices in a bowl and squeeze over the lemon juice to prevent discoloration.
  4. Arrange the drained apples on top of the the cake batter. Bake for 40 minutes or until risen and golden. While still warm, sprinkle with sugar and cinnamon.
