Ingredients

Quantity Ingredient
1 1/4 cups sour cream
165g firmly packed brown sugar
1 egg
335g wholemeal plain flour
1 teaspoon bicarbonate of soda
1/4 cup warmed honey
1/2 cup chopped mixed nuts

Topping

Quantity Ingredient
1 tablespoon caster sugar
1/4 teaspoon nutmeg
1 tablespoon butter, softened

Method

  1. Preheat the oven to 150°C. Generously grease a 20 cm round cake tin.
  2. Beat together the sour cream, sugar and egg, then sift in the flour and bicarbonate of soda. Mix well. Beat in the warmed honey and chopped nuts.
  3. Spoon the mixture into the prepared tin and bake for about 1 1/2 hours or until a skewer inserted into the centre comes out clean. Turn out onto a wire rack.
  4. Mix together the topping ingredients and brush over the top of the cake. Serve warm or cold, sliced, either buttered or plain.
