Ingredients

Quantity Ingredient
225g plain flour
220g caster sugar
1 teaspoon baking powder
1/4 teaspoon salt
125g butter, diced
2 eggs, beaten
1/2 cup milk
1 lemon, grated rind
1/2 cup chopped walnuts

Lemon syrup

Quantity Ingredient
1 lemon, juiced
55g caster sugar

Method

  1. Preheat the oven to 180°C. Grease a 21 cm x 11 cm loaf tin and line the base with baking paper.
  2. Sift the flour, sugar, baking powder and salt into a bowl. Rub in the butter using your fingertips. Mix the beaten eggs and milk, stir into the flour mixture, then fold in the lemon rind and walnuts.
  3. Turn into the prepared tin and bake for 1 1/4 hours or until a skewer inserted in the centre comes out clean.
  4. To make the lemon syrup, mix the lemon juice and sugar together. When the cake is cooked and while it is still hot, pour over the top. Allow the cake to cool in the tin.
