Children love this cake and it’s a very popular choice for birthday parties. The white, pink and brown colours form intriguing designs that differ from one slice to the next.

Ingredients

Quantity Ingredient
250g butter, softened
275g caster sugar
1 teaspoon vanilla essence
3 eggs
335g self-raising flour
1/2 teaspoon salt
3/4 cup milk
2 tablespoons cocoa powder
2 tablespoons boiling water
red food colouring

Method

  1. Preheat the oven to 180°C. Grease a deep 20 cm square cake tin and line the base with baking paper.
  2. Using an electric mixer, cream the butter, then gradually beat in the sugar and vanilla until light and creamy. Beat the eggs lightly, and beat gradually into the creamed butter mixture.
  3. Sift the flour and salt into a bowl and fold into the creamed mixture alternately with the milk.
  4. Divide the mixture into three portions. Sift the cocoa and blend with the boiling water. Stir this mixture into one portion of the cake mixture. To the second portion, add a few drops of red food colouring to colour it pink. The third portion is left plain.
  5. Drop tablespoons of the mixture into the prepared tin, alternately pink, plain and chocolate. Run a knife gently through the mixture a few times to marble it. Bake for 50–60 minutes.
  6. Turn out onto a wire rack to cool.
