It was such a breakthrough to have ingredients where you could do this — mix them all together in the one bowl. Previously there was a lot of beating things separately. Women loved this melt and mix idea, it was very popular.

Ingredients

Quantity Ingredient
1 tablespoon white vinegar
1 cup evaporated milk
225g plain flour
a pinch of salt
1/2 cup cocoa powder
1 1/2 teaspoons bicarbonate of soda
275g caster sugar
155g butter, melted
1 teaspoon vanilla essence
2 eggs
raspberry jam or whipped cream
Rich chocolate icing
or sifted icing sugar

Method

  1. Preheat the oven to 180°C. Grease two 20 cm sandwich tins and line the bases with baking paper.
  2. Mix the vinegar with the evaporated milk to sour it.
  3. Sift the flour, salt, cocoa, bicarbonate of soda and sugar into a bowl. Add the butter and dry ingredients with the soured milk, vanilla and eggs. Beat vigorously for about 2 minutes or until smooth. Spoon into the prepared tins and bake for 30–35 minutes or until a skewer inserted in the centre comes out clean. Cool on a wire rack.
  4. Sandwich together with raspberry jam or whipped cream and ice with chocolate icing or dust with icing sugar.
