Ingredients

Quantity Ingredient
440g firmly packed brown sugar
300g self-raising flour, sifted
125g butter
1 teaspoon bicarbonate of soda
1 cup milk
1 egg, beaten
1 teaspoon grated nutmeg
1/2 cup chopped walnuts

Method

  1. Preheat the oven to 180°C. Generously grease a 20 cm square cake tin and line with baking paper.
  2. Combine the sugar and flour in a large bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Press half the mixture into the prepared tin.
  3. Dissolve the bicarbonate of soda in the milk, add the egg and nutmeg and pour over the remaining sugar and flour mixture. Mix well, then spoon into the tin on top of the pressed-in mixture. Sprinkle walnuts over.
  4. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Cool in the tin for 15 minutes then turn out onto a wire rack to cool completely.
