Ingredients

Quantity Ingredient
300g plain flour
1 teaspoon mixed spice
2 teaspoons ground ginger
1 teaspoon bicarbonate of soda
125g butter
75g firmly packed brown sugar
2 tablespoons treacle
1/2 cup golden syrup
2 eggs, beaten
1/2 cup milk

Method

  1. Preheat the oven to 150°C. Grease an 18 cm square cake tin and line the base and sides with baking paper.
  2. Sift the flour, spice, ginger and bicarbonate of soda into a bowl.
  3. Combine the butter, sugar, treacle and golden syrup in a small heavy saucepan. Heat gently until melted and dissolved, then allow to cool.
  4. Stir the cooled butter mixture into the dry ingredients with the eggs and milk and beat thoroughly until smooth.
  5. Pour into the prepared tin and bake for 1 1/4–1 1/2 hours or until a skewer inserted in the centre comes out clean.
  6. Cool in the tin for 15 minutes, then turn out. Serve plain or iced with Lemon Glacé Icing.
