Ingredients

Quantity Ingredient
250g self-raising flour
125g butter, diced
110g caster sugar
1 orange, grated rind
1 egg, beaten
1/2 cup milk
1/2 cup water
1 cup sultanas
1/2 cup chopped candied orange peel

Method

  1. Preheat the oven to 180°C. Grease an 18 cm x 10 cm loaf tin and line the base with baking paper.
  2. Sift the flour into a bowl and rub in the butter. Stir in the sugar and orange rind. Add the egg, milk and water and beat well.
  3. Stir in the sultanas and candied peel and spoon into the prepared tin. Bake for 1 1/4 hours or until cooked when tested with a skewer. Turn out and place, top side up, onto a wire rack to cool.
  4. Serve sliced and buttered.
