Ingredients

Quantity Ingredient
150g self-raising flour
a pinch of salt
3 eggs
165g caster sugar
1 teaspoon butter, melted
3 tablespoons hot water
jam, for filling
sifted icing sugar, to dust

Method

  1. Preheat the oven to 180°C. Grease two 18 cm sandwich tins and dust lightly with a little flour. Line the bases with baking paper.
  2. Sift the flour and salt together three times.
  3. Separate the eggs. Beat the whites until soft peaks form, then add the sugar gradually, beating until thick. Gently fold in the yolks. Fold in the sifted flour, lightly and evenly. Fold in the melted butter and hot water quickly and lightly.
  4. Spoon into the prepared tins and bake for 20 minutes.
  5. Turn out on a wire rack to cool. When cool, sandwich with slightly warmed jam and dust with icing sugar.

Variations

  • For a 20 cm sponge sandwich

    Preheat the oven to 180°C. Grease two 18 cm sandwich tins and dust lightly with a little flour. Line the bases with baking paper. Follow the method at left, using 1 1/2 cups self-raising flour, 1/4 teaspoon salt, 4 eggs, 1 cup caster sugar, 1 teaspoon melted butter and 4 tablespoons hot water. Bake for 20–25 minutes. Turn out onto a wire rack to cool.

    For a 23 cm sponge sandwich

    Preheat the oven to 180°C. Grease two 23 cm sandwich tins and dust lightly with a little flour. Line the bases with baking paper. Follow the method at left, using 1 3/4 cups self-raising flour, a pinch of salt, 5 eggs, 1 1/4 cups caster sugar, 1 1/2 teaspoons melted butter and 5 tablespoons hot water. Bake for 20–25 minutes. Turn out onto a wire rack to cool.
