Ingredients

Quantity Ingredient
300g plain flour
1 tablespoon baking powder
1/3 teaspoon salt
1/2 cup sultanas
1 cup apple cider
90g butter, melted
1 egg, lightly beaten

Topping

Quantity Ingredient
55g caster sugar
1 1/2 teaspoon ground cinnamon

Method

  1. Preheat the oven to 200°C. Grease twelve 1/3-cup muffin tins or line them with paper cases.
  2. Sift the flour, baking powder and salt into a bowl. Add the sultanas and toss to coat evenly with flour.
  3. Combine the cider, butter and egg, then pour over the flour mixture, stirring until just mixed. The batter will be lumpy.
  4. Spoon into the prepared muffin tins, filling them two-thirds full. Combine the sugar and cinnamon and sprinkle over the muffins.
  5. Bake for 20–25 minutes or until browned and risen. Turn out onto a wire rack to cool.
