Ingredients

Quantity Ingredient
1 egg, beaten
75g firmly packed brown sugar
2 tablespoons golden syrup, warmed
1 1/4 cups buttermillk
60g butter, melted
2/3 cup rolled oats
150g wholemeal plain flour
2 teaspoons baking powder
3/4 teaspoon salt
3/4 teaspoon bicarbonate of soda
2/3 cup raisins

Method

  1. Preheat the oven to 180°C. Grease a 20 cm x 10 cm loaf tin and line it with baking paper.
  2. Mix the egg with the sugar, syrup, buttermilk, butter and rolled oats. Let stand for 5 minutes.
  3. Sift the flour, baking powder, salt and bicarbonate of soda and fold into the oat mixture. Stir in the raisins lightly.
  4. Turn into the prepared loaf tin and spread the batter evenly with a spatula.
  5. Bake for 1 hour or until a skewer inserted in the centre comes out clean. Cool on a wire rack. Serve sliced and spread with butter.
