This classic French custard filling is often used in fruit tarts. If you like a fluffier pastry cream, you can fold 1/2 cup of whipped cream into the cooled pastry cream just before using.

Ingredients

Quantity Ingredient
2 cups milk
4 egg yolks
30g cornflour
2 tablespoons plain flour
55g caster sugar

Method

  1. Heat the milk in a saucepan over medium heat, until bubbles start to appear.
  2. Using an electric mixer, beat the egg yolks, cornflour and plain flour until combined. Add the sugar and beat until pale and thick.
  3. Pour the hot milk onto the egg yolks, whisking continuously. Return to a clean saucepan. Cook on low heat for 8 minutes, stirring, until the mixture is thick and beginning to bubble.
  4. Transfer to a bowl and cover the surface with a piece of baking paper. Cool before using.

Variations

  • Rich crème pâtissière

    After cooling, fold in 3/4 cup whipped cream.

    Tutti-frutti crème pâtissière

    Omit the vanilla bean. After cooling, fold in 2 tablespoons rum, brandy or fruit liqueur, and 1/4 cup chopped glacé fruits.

    Frangipane cream

    After removing the crème pâtissière from the heat, beat in 60 g butter and 1/4 cup crushed almond macaroons or chopped blanched almonds.

    Chocolate crème pâtissière

    Combine 2 cups milk and 90 dark chocolate in a saucepan on medium heat, stirring, until the chocolate has melted and the mixture is smooth. Using an electric mixer, beat 4 egg yolks, 1/4 cup cornflour and 2 tablespoons plain flour until combined. Add 1/4 cup sugar and beat until pale and thick. Pour hot chocolate milk onto egg yolks, whisking continuously. Return the mixture to a clean saucepan. Cook on low heat for 8 minutes, stirring, until the mixture is thick and beginning to bubble. Transfer to a bowl and cover the surface with a piece of baking paper. Cool before using. If you like a fluffier pastry cream fold in 1/2 cup whipped cream.
