Zucchini, mint & goat’s cheese quiche

Pastry

Ingredients

Quantity Ingredient
300g plain flour, sifted
170g cold butter, diced
1 1/2 cups grated tasty cheese
1/2 cup iced water
2 zucchini, sliced
120g goat’s cheese or feta
4 eggs, lightly beaten
3/4 cup milk
1/2 cup roughly chopped mint

Method

  1. For the pastry, place the flour in the bowl of a food processor. Add the butter and process with a pulse mode until the mixture resembles breadcrumbs. Add the grated cheese. Add the water and process in a continuing mode until a dough has formed. Wrap in plastic wrap and chill for at least 10 minutes.
  2. Lightly grease a 23 cm loose-based flan tin 4 cm deep.
  3. Roll the dough out on a lightly floured surface to a 27 cm circle. Lift with the rolling pin and ease into the tin, pressing into the fluted edge. Trim the edges, prick the base with a fork and chill for 25 minutes.
  4. Preheat the oven to 180°C.
  5. Line the pastry shell with baking paper and pastry weights or rice and blind bake for 15 minutes. Remove the paper and rice and bake for a further 10 minutes.
  6. Scatter the zucchini over the pastry base and crumble over the goat’s cheese or feta and the mint.
  7. Whisk together the eggs and milk and season well. Pour into the pastry shell and bake for 30–35 minutes, until set and golden. Serve warm.

Variations

  • Zucchini and bacon quiche

    Scatter a little cooked chopped bacon or pancetta over the zucchini.

    Mixed vegetable quiche

    For a fast evening meal, use frozen shortcrust pastry sheets for the base and scatter over left-over mixed vegetables (peas, corn, asparagus etc) before filling with the egg and cheese mixture.

    Blue cheese quiche

    Pan-fry sliced onions until very soft. Add a little brown sugar and balsamic vinegar to caramelise. Spread over the pastry shell and crumble over 150 g of your favourite blue cheese before filling with the egg mixture.
