Ingredients

Quantity Ingredient
1 quantity Basic sweet rich dough
220g caster sugar
1 orange, grated rind
1/2 cup sultanas, (optional)
60g melted butter

Orange icing

Quantity Ingredient
250g icing sugar, sifted
2 tablespoons orange juice

Method

  1. Prepare the dough and chill.
  2. When ready to shape, combine the sugar, orange rind and sultanas. Divide the dough in half and roll each half out on a well-floured surface to a rectangle 46 cm x 23 cm. Brush with the melted butter and sprinkle with the sugar and sultana mixture. Roll up from one long side, like a Swiss roll.
  3. Cut into 12 thick slices and place, cut sides up, in two lightly greased 20 cm sandwich tins. Cover and let rise in a warm place for about 1 hour or until doubled in bulk.
  4. Meanwhile, preheat the oven to 190┬░C.
  5. Bake the rolls for about 25 minutes.
  6. For the orange icing, combine the icing sugar and orange juice to make a thin icing.
  7. Remove the rolls from the tins and drizzle with the orange icing while warm.

Variation

  • Cinnamon pinwheels follow the recipe for orange rolls above, omitting the orange rind and using instead 2 teaspoons cinnamon and a little extra butter.
