Ingredients

100g ground almonds
750ml chicken stock
1 small onion, stuck with 2 cloves
1 bay leaf
125ml milk
pinch nutmeg
salt and freshly ground black pepper
30g butter
2 tablespoons plain flour
250ml cream
slivered almonds, toasted, to garnish

Method

  1. Combine ground almonds, stock, onion and bay leaf in a saucepan. Simmer, covered, for 30 minutes. Remove onion and bay leaf, pour mixture into a jug and add milk, nutmeg, salt and pepper. Melt butter, add flour and stir over low heat for 1 minute. Remove from heat, and blend in stock mixture. Stir over heat until boiling. Simmer for 5 minutes. Add cream and reheat but do not boil. Serve hot or cold, with a sprinkle of slivered almonds.
