Serve with grilled bacon for breakfast, or as a dessert with ice cream.

Ingredients

Quantity Ingredient
3 large cooking apples, peeled and cored
110g sugar
2 tablespoons brandy
2 teaspoons lemon zest, grated
225g plain flour, sifted
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs, lightly beaten
1 teaspoon oil
80ml beer
oil, for deep-frying
icing sugar, sifted

Method

  1. Cut each apple crossways into 4 rings. Mix 55 g sugar with the brandy and lemon zest, pour over apples and stand for 2–3 hours. Mix remaining sugar with flour, baking powder, salt, eggs, oil and beer to make a batter. Let batter stand for 1 hour. Drain and dry apple rings. Dip in batter one at a time and deep-fry in hot oil until golden brown and crisp. Drain on paper towels. Sprinkle dessert fritters with icing sugar. Serve hot.
