825g tinned apricots
8 cloves
1 x 3 cm stick cinnamon
8 whole allspice
60ml white vinegar
110g sugar
1 small orange, sliced
cloves, extra (optional)

Method

  1. Drain apricots, reserving 250 ml syrup. Tie cloves, cinnamon and allspice in a piece of muslin (cheesecloth) and put into saucepan with reserved apricot syrup, vinegar, sugar and orange slices. Bring to the boil. Add apricots and simmer for 5 minutes. Cover and allow to cool at room temperature. Remove spice bag. Serve warm or chilled. If liked, stud some apricots with cloves. Spiced apricots improve on keeping; after 1 week they are at their best. Serve with baked ham, roast pork or cold meats.
