125g butter
55g sugar
1 teaspoon natural vanilla extract
1 egg yolk
300g self-raising flour
pinch salt
1 egg white
125g icing sugar, sifted
almonds, blanched and finely chopped

Method

  1. Cream butter with sugar and vanilla, add egg yolk and beat well. Mix in sifted flour and salt to form a firm dough. Place dough on floured surface and roll out to 5 mm thickness. Beat egg white until stiff, add icing sugar gradually and beat until smooth.
  2. Spread icing over prepared biscuit mixture. Sprinkle with almonds and cut into diamond or other decorative shapes. Place on greased baking trays and bake in a preheated moderately hot oven for 10–12 minutes.
