Ingredients

4 firm bananas
3 tablespoons lemon juice
2 tablespoons icing sugar, sifted
150g plain flour
pinch salt
170ml warm water
2 tablespoons oil
2 egg whites
oil, for deep-frying
lemon juice, to serve
icing sugar, sifted, to serve

Method

  1. Peel bananas and cut each into 3 chunks. Sprinkle with lemon juice and icing sugar. Let stand for 30 minutes. Meanwhile, sift flour and salt into a bowl, make a well in centre and add water and oil. Stir from centre, gradually drawing in flour, and beat until smooth. Cover and stand for 30 minutes.
  2. Beat egg whites to a firm snow and fold into batter. Dry banana chunks, dip in batter and deep-fry in hot oil until golden-brown. Drain on paper towels. Serve at once, sprinkled with extra lemon juice and icing sugar.
