A simple cold dish that is made easily in minutes. Use the translucent pea-starch noodles and, if liked, vary the bean sprouts – julienne strips of crispy cucumber are ideal. The hot mustard dip makes all the difference.

Ingredients

Quantity Ingredient
30g translucent noodles
270g fresh bean sprouts
3-4 spring onions, thinly bias cut

Marinade

Quantity Ingredient
4 tablespoons vinegar
2 teaspoons salt
2 teaspoons sesame oil

Method

  1. First prepare marinade by combining ingredients in a bowl.
  2. Cover noodles with boiling water and soak for about 15 minutes until soft and translucent. Drain and cut into 8 cm pieces.
  3. Drop bean sprouts into boiling salted water, bring back to the boil, then quickly drain in a colander. While bean sprouts are still hot, toss quickly in marinade. Add spring onions and drained noodles and mix well. Refrigerate and serve cold with a little dish of hot English mustard for dipping.
