An Italian specialty of air-dried and cured beef which is usually cut in paper-thin slices and served a little like carpaccio. It has not yet become part of the supermarket range but is available at good delicatessens and butchers. Bresaola is delicious laid over a bed of rocket leaves and drizzled with lemon juice and extra virgin olive oil to taste. Top with shavings of parmesan and a good grinding of pepper and serve with bread.
