Ingredients

500-700g baby brussels sprouts
170ml cream
salt
freshly ground white pepper
knob of butter

Method

  1. Cook sprouts in boiling salted water for 7 minutes. Drain thoroughly. It is important that the sprouts are absolutely dry when added to the cream. Care must therefore be taken not to overcook them and to allow time for draining.
  2. Meanwhile, put cream in the pan and bring to the boil. Add sprouts, butter, salt and pepper. Cover pan and shake well to mix the contents thoroughly. Set on a very low heat and simmer for a few minutes to allow flavour of cream to mix with that of sprouts and for cream to reduce and thicken.
