A Canadian recipe for quick-bread. Serve buttered with salads and soups.

Ingredients

Quantity Ingredient
375g plain flour
1/4 teaspoon bicarbonate of soda
1 teaspoon salt
190ml buttermilk
90g butter, melted
1 tablespoon black treacle or golden syrup

Method

  1. Sift flour, bicarbonate of soda and salt into a bowl. Stir in buttermilk, 60 g butter and the molasses or golden syrup to form a soft dough.
  2. Transfer dough to a floured surface and knead for 5 minutes or until smooth and elastic. Pat into a round loaf about 15 cm in diameter. With a sharp knife, score loaf to make 6 wedges, cutting about 1 cm into dough.
  3. Place on a baking tray. Bake in a preheated moderately hot oven for 30 minutes or until a skewer inserted in centre comes out clean. Brush hot loaf with remaining melted butter and cool on a wire rack. Serve cut into wedges.
