260g plain flour
2 teaspoons baking powder
pinch salt
125g butter or margarine
115g caster sugar
1 1/2 teaspoons natural vanilla extract
2 tablespoons honey
1 egg
2 tablespoons milk
60g cornflakes, lightly crushed
105g glacé cherries, halved

Method

  1. Sift flour, baking powder and salt. Cream butter or margarine with sugar and vanilla. Add honey and egg and beat well. Fold in dry ingredients, a little at a time, alternating with milk. Drop teaspoonfuls of mixture into lightly crushed cornflakes and toss gently to coat. Place on greased baking trays and press a halved glacé cherry in centre of each. Bake the cookies in a preheated hot oven for 10 minutes or until golden.
