250g butter, softened
115g caster sugar
250g plain flour
2 teaspoons ground ginger
caster sugar, for sprinkling

Method

  1. Cream together butter and sugar until light and fluffy. Sift together flour and ginger and gradually work into butter mixture. Knead lightly then roll out on a lightly floured surface until 5 mm thick. Cut into round or star shapes using a biscuit cutter. Transfer to a baking sheet and bake in a preheated slow oven until golden. Sprinkle with caster sugar while warm.

Variations

  • Spiced biscuits: omit ginger but sift 1 teaspoon ground cinnamon and 1 teaspoon ground mace with the flour.

    Butter shortbread biscuits: omit ginger and add a few drops of vanilla extract to mixture.
