These hearty oatmeal cookies have sustained many a hungry Scottish child in search of a snack.

Ingredients

Quantity Ingredient
250g butter
230g brown sugar
110g white sugar
1 egg
2 teaspoons natural vanilla extract
60ml water
300g plain flour
1/2 teaspoon salt
1 1/2 teaspoons bicarbonate of soda
1 teaspoon cinnamon
70g nuts, chopped
125g raisins
250g rolled oats
walnuts or glace cherries, to decorate

Method

  1. Cream butter with sugars, egg and vanilla until light and fluffy. Beat in water. Sift dry ingredients and stir in with nuts, raisins and oats. Drop heaped teaspoonfuls of mixture, about 5 cm apart, onto greased baking trays. Press a walnut or cherry into the top of each biscuit. Bake in a preheated moderately hot oven for 12–15 minutes or until lightly browned. Cool on a wire rack.
