Chicken breasts are first coated with a Japanese-style marinade, then grilled with a sweet glaze. The crispy golden skin is delicious and the flesh moist and tender. Serve with noodles and a salad.

Ingredients

Quantity Ingredient
4 chicken breasts
125ml dry sherry
60ml light soy sauce
1 teaspoon fresh ginger, finely chopped
1 garlic clove, crushed
1 tablespoon sugar
2 tablespoons honey

Method

  1. Place chicken breasts in a shallow baking dish. Combine sherry, soy sauce, ginger, garlic and sugar and pour over breasts, turning them so all sides are coated with marinade. Cover dish and chill overnight. Drain breasts, reserving marinade, and arrange in grill pan, skin side down.
  2. Place under preheated grill for 12 minutes. Meanwhile, make glaze by combining honey and 2 tablespoons of the marinade. Turn breasts skin side up and continue grilling for a further 8 minutes, brushing several times with glaze.
