Ingredients

3 1/2 tablepoons oil
1 onion, sliced
2 rashers bacon, rind removed, chopped
1 x 185g tin crabmeat, drained
3 tablepoons soy sauce
375g chinese noodles, cooked in boiling water and drained well
2 1/2 tablepoons butter
3 slices fresh ginger, chopped
3 garlic cloves, crushed
1 small red pepper, seeded and shredded
6 oysters
250g raw prawns, shelled and de-veined
3 spring onions, sliced
salt and freshly ground white pepper
1 teaspoon sugar
2 tablepoons dry sherry

Method

  1. Heat oil, add onion and bacon and stir-fry for 1 minute. Add crabmeat and 2 tablespoons soy sauce, and stir-fry for 1 minute. Mix in noodles and remaining soy sauce and stir-fry for 1 minute. Reduce heat to low and simmer gently for 3–4 minutes. Heat butter in a separate small frying pan over medium heat, add ginger, garlic, red pepper, oysters and prawns. Stir-fry for 1 minute. Sprinkle with spring onions, salt, pepper, sugar and sherry. Stir-fry for a further 1 minute. Spoon the noodles mixture into a large serving bowl and spoon prawn mixture over.
