A lovely dessert, like a beautiful cheesecake in a glass – can be mixed in 5 minutes.

Ingredients

Quantity Ingredient
250g ricotta cheese
1 teaspoon lemon zest, grated
2 egg yolks
55g caster sugar
1 teaspoon cinnamon
2 tablespoons dark rum
60g chocolate, grated
strawberries, to decorate
or chocolate, grated, to decorate

Method

  1. Beat ricotta and lemon zest until very smooth and creamy.
  2. In a separate bowl, beat egg yolks until light, then add sugar, cinnamon and rum and beat for 2 minutes.
  3. Combine the 2 mixtures and fold in chocolate. Spoon into 4 glass bowls or tall glasses, and chill for 1 hour. Top with fresh strawberries or grated chocolate to serve.
