Ingredients

Quantity Ingredient
8 chicken drumsticks
3 tablespoons oil
2 teaspoons worcestershire sauce
2 teaspoons cider vinegar
1 tablespoon each english and french mustard
1/4 teaspoon tabasco sauce
1 garlic clove, finely chopped
pinch salt
freshly ground black pepper
2 teaspoons mango, finely chopped
or 2 teaspoons fruit chutney

Method

  1. Slash chicken flesh in several places. Mix all remaining ingredients together and spread over chicken, pressing it into slashes. Cover and leave for 6 hours, or overnight, in refrigerator, turning pieces over several times.
  2. Place bony side up under a preheated moderate grill for 10 minutes. Turn, baste with marinade and grill for a further 10 minutes or until done.
