Ingredients

Quantity Ingredient
625ml water
50g fine sago
6 cooking apples, peeled and cored
110g sugar
1/2 lemon, peeled and juiced
few drops red food colouring

Method

  1. Bring water to the boil in a large saucepan. Sprinkle in sago and cook for about 15 minutes or until mixture is clear. Add the apples, sugar and lemon peel and juice to the sago. Cover and simmer very gently for 10–20 minutes or until apples are tender.
  2. Lift apples out onto a heated serving dish. Remove lemon zest from sago mixture and add a few drops of food colouring. Pour it over and around the apples.
