Ingredients

150g plain flour
175g rolled oats
250g butter or firm margarine

Filling

160g dates, pitted and chopped
1 tablespoon lemon juice
2 tablespoons rum or water
2 teaspoons lemon zest, grated
55g brown sugar
1 teaspoon cinnamon or allspice

Method

  1. To make filling, place dates in a saucepan with remaining filling ingredients and simmer for 20 minutes, stirring often, or until dates are soft. Cool. Sift flour into a bowl. Add oats and rub in butter or margarine until well blended.
  2. Divide mixture in half and press one portion into a greased 18 cm square cake tin. Spoon date mixture evenly on top, then sprinkle with remaining rolled oats mixture and press it into place to cover filling. Bake in a preheated moderate oven for 25 minutes. Cut into bars and allow to cool in tin.
