6 large navel oranges
125ml water
330g sugar
60ml orange juice
60ml grand marnier

Method

  1. Thinly pare peel from 3 oranges and cut into very thin julienne strips. Place peel strips in a small saucepan, barely cover with water, bring to the boil and simmer for 10 minutes. Drain and run cold water over peel.
  2. Place 125 ml water and the sugar in another saucepan. Heat, stirring, until sugar dissolves. Bring to the boil and boil until syrup thickens and turns a pale straw colour. Immediately remove from the heat, add blanched orange zest strips and stir gently. Let the peel soak in the syrup for 30 minutes, then stir in orange juice and Grand Marnier.
  3. Remove peel and pith from all of the oranges. Slice each orange into 3 or more slices and place in a shallow serving dish. Top with the glazed peel and spoon syrup over oranges. Chill well before serving, spooning syrup over oranges occasionally.
