Ingredients

Quantity Ingredient
1.5g whole fish, scaled and cleaned
salt and freshly ground black pepper
lemon juice, squeezed
1 onion, chopped
1 garlic clove, crushed
1 tablespoon parsley, finely chopped
1 tablespoon olive oil
3 tomatoes, peeled, seeded and chopped
125ml dry white wine
lemon wedges, to garnish

Method

  1. Sprinkle fish inside and out with salt, pepper and lemon juice and place in a baking dish lined with greased foil.
  2. Sauté onion and garlic with parsley in olive oil until soft. Add tomatoes to onion mixture. Fry gently for a few minutes, then add a little water and simmer for a few minutes longer. Spoon this mixture over fish. Pour wine over and around fish.
  3. Cook in a preheated moderate oven for about 40 minutes or until fish flakes easily when tested. Garnish with lemon.
