An unusual Danish specialty to enjoy as a dessert or for brunch with bacon or ham.

Ingredients

Quantity Ingredient
370g rice, boiled and cold
2 eggs, lightly beaten
pinch salt
1 tablespoon lemon or orange zest, grated
60g raisins or sultanas, chopped
40g blanched almonds, chopped
2 tablespoons plain flour
60g butter
icing sugar, sifted, to serve
jam, to serve
thick cream, (optional) to serve

Method

  1. Mix together rice, eggs, salt, lemon or orange zest, raisins or sultanas, nuts and flour.
  2. Heat butter in a large frying pan and drop mixture into the pan in large tablespoonfuls. Cook fritters until golden on both sides and cooked through, turning once (about 3 minutes each side). Drain on paper towels. If serving as a dessert, sprinkle with icing sugar and serve hot with apricot or raspberry jam and thick cream.
