Ingredients

Quantity Ingredient
3 tablespoons butter
2 tomatoes, peeled and sliced
1 small green pepper, cored, seeded and sliced
125g mushrooms, sliced
salt and freshly ground black pepper
4 red mullet, whiting or other small whole fish, scaled and cleaned
60ml red wine
2 tablespoons chives, snipped

Method

  1. Melt 2 tablespoons butter in a shallow flameproof casserole or gratin dish. Add vegetables and cook gently for 5 minutes, stirring occasionally. Season with salt and pepper.
  2. Place fish side by side on top of vegetables and pour over wine. Sprinkle with chives and dot with remaining butter.
  3. Cover and bake in a preheated moderate oven for 20–30 minutes or until the fish flakes easily when tested with a fine skewer.
