Encyclopedia of Food and Cookery

The delectable savoury dumplings or cakes of Italy, mostly made from mixtures containing semolina or Polenta, mashed potatoes or ricotta cheese. They are served with a variety of sauces or simply with melted butter and grated cheese, and hold the same place as pasta in a meal. They can also make a satisfying meal when served alone with salad, or can accompany grilled (broiled) meats or roast chicken. Gnocchi can be shaped like little dumplings and poached in lightly salted water, or cut into cakes and baked in the oven.
