Goat's milk is more easily digestible than cow’s milk, and is excellent for people who are allergic to cow’s milk. Goat’s milk cheeses are delicious, velvet-textured and fresh. They are found all over France and in countries around the Mediterranean. Goat’s cheeses vary in flavour according to the region and the length of time taken for ripening, but most taste nutty and sweet. Garlic, chives and herbs can be used as flavourings.
